Easy Cake Recipe with chocolate frost and mango, strawberry topping....for anniversary celebration


I made this Yellow cake with chocolate fudge on our semi anniversary celebration:)

It was really awesome :)
It's said that little bite of chocolate makes us feel good that's why I prefer chocolate frost on it!!!!!!
Here is the recipe....

Ingredients:
For Yellow Cake:
  • 1 cup butter
  • 1 1/2 cup white sugar
  • 3eggs
  • 3/4 cup milk
  • 1 1/2 teaspoons vanilla extract
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

  • For frost: 
  •  cup granulated sugar
    1/4 cup cocoa
    1 teaspoon vanilla extract
    1/4 cup butter
    1/4 cup milk

Directions:

  1. Preheat oven to 350F
  2.  Grease and flour cake maker.
  3.  Mix together the flour, baking powder and salt ,Set aside
  4. In a large bowl, mix together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  5.  Beat in the flour mixture alternately with the milk, mixing just until incorporated.
  6.  Pour batter into prepared pans.
                            




7.Bake in the preheated oven for 25 to 30 minutes, or until tops spring back when lightly tapped. 
8.Cool 15 minutes before turning out onto cooling racks.

Fudge:

Frosting:
 Mix 1cup granulated sugar +1/4 cup cocoa +1 teaspoon vanilla extract + 1/4 cup butter +1/4 cup milk and boil this mixture. Frost is ready.
Decoration:
Decorate the cake as shown,
Cut little upper portion of the cake so that the frosting sticks firm. Apply frosting to the cake with knife and freeze it for about 1hr.
Now decorate the cake with the fruits you like. I used Mango and strawberry.

Note Worthy TIPS:
While applying frost to cake the mixture spills on the cake boards and will ruin the complete preparation. To avoid this take wax strips/ Cut zip lock bag in to long strips and place them beneath the cake. remove these strips after you complete the decoration.
Always decorate cake with fruits/ nuts after freezing it atleast for 1hr.

Easy and Tasty Tomato onion dal - Tomato pappu

Tasty tomato dal with cryspy onions.......

To make tomato pappu you will need:
Toor dal/ kandi pappu-1cup
Tomatos sliced-1 cup
Onions - sliced in to large pieces- 1 cup
Green chillies- chopped-2ts
Salt to taste
chili powder-1/2ts
Turmeric- pinch
Garlic- finely chopped- 1/2ts
chopped ciliantro---2t.s
Cumin seeds--------Few
Mustard seeds------Few
Red chili-1


Method:

  1. Take 1cup of toor dal in a pressure cooker and wash it.
  2. Cook by adding 2 cups of water for about 2 whistles.
  3. Mean while, take a pan and heat 2ts of oil in it and add cumin seeds + mustard seeds + red chili and allow them to splutter.
  4. Add onions + Green chili + ginger and saute until they get half cooked.
  5. Now, add tomato's and cook the mixture under medium flame until tomato's are completely cooked.
  6. Next add chili powder and salt. Mix well
  7. Add cooked dal to the mixture and mix well.
  8. Finally garnish with cilantro. 

This pappu goes well with rice and roti. Hope you like my recipe.....

Mango Lassi / Mango Yoghurt Drink

Lassi is the traditional yoghurt / Curd based drink in India, Mango lassi is the most common recipe in every Indian house in summer season. First let us know the health benefits of this lassie. 

MANGO:
It's Summer season.... no i'm wrong mango season....Yes, Mango is the favorite fruit for every one. I love to have them in any form....I used to love mango more in my tutti frutti.

Mango is rich in a variety of phytochemicals and nutrients. The fruit pulp is high in prebiotic dietary fibervitamin C, diverse polyphenols and provitamin Acarotenoids.
Mango contains essential vitamins and dietary minerals. The antioxidant vitamins AC and E compose 25%, 76% and 9% of the Dietary Reference Intake(DRI) in a 165 grams (5.8 oz) serving. Vitamin B6 (pyridoxine, 11% DRI), vitamin K (9% DRI), other B vitamins and essential nutrients, such as potassium,copper and 17 amino acids are at good levels. Mango peel and pulp contain other phytonutrients, such as the pigment antioxidants – carotenoids and polyphenols – and omega-3 and -6 polyunsaturated fatty acid
Yoghurt:
Yoghurt is nutritionally rich in proteincalciumriboflavinvitamin B6 and vitamin B12. It has nutritional benefits beyond those of milk. People who are moderately lactose-intolerant can consume yoghurt without ill effects, because much of the lactose in the milk precursor is converted to lactic acid by the bacterial culture.


I love yoghurt, I have learned recently that consumption of low fat yoghurt results in weight loss due to calcium in it. So, Folks enpjy this drink as much as you can in this summer.

The cool juice made by combining yoghurt and Mango makes hot summer cool besides many health benefits.


Ingredients:
Mango Sliced-1cup
Yoghurt / curd -1 cup
Sugar/ High fructose corn syrup-to taste
Cardamom/ elachi powder- 1/2 ts
Milk/ water- 1/4 cup
Ice-1/4 cup


Method:
Add all the above ingredients in a juice jar except cardamom powder. Grind them together and take the mixture in a glass and finally add cardamom powder and enjoy.
Worthy to NOTE:
Too much consumption of mango  leads in digestive problems. So, avoid having too much of mango every day. we all know too much of anything is too bad.

Food for those 5 days of Women- Spinach Coconut and Sesame dal

Do you have any idea about how much amount of blood is lost during menstrual cycle of women?
It is about 30-40ml in a normal women.


At this stage women requires iron.
As we all know iron helps in formation of new blood, it is the main component in hemoglobin.
During these five days food rich in iron is recommended for the women.


Women loose iron not only during menstrual cycle but also during pregnancy. Survey reviles that 80% pregnant women are anemic. Spinach contain Folic acid (vit B9), iron and very essential vitamin A that are very essential during pregnancy. Sesame is also rich source of iron.  


So I'm combining both to make a perfect combo that recovers iron and other minerals during those five days and pregnancy.

Ingredients:
Spinach-Cleaned and Cut-1cup
Yellow lentils/ toor dal/ kandi pappu - 1cup
Onions-1/2cup
sesame powder-1ts
Fresh coconut grinded with 2 cloves of garlic-3ts
vegetable oil-2ts
cumin seeds-few
mustard seeds-few
red chili-1
Green chilis/ peppers-finely chopped 4ts
salt to taste
red chili powder- 1/2ts
turmeric-pinch
tamarind juice-1cup (extracted form lemon size tamarind)


Method:


  1. Take Yellow lentils+spinach+green chilies+onions+turmeric+2cups of water in a Cooker and cook for 3 whistles.
  2. Open the lid when all the moisture inside the cooker escapes out.
  3. Mash all the ingredients.




      4. Now take a pan and het 2ts of oil and add cumin seeds + mustard seeds + Red chili and wait until they 
          splutter.
      5. Add Coconut mixture and cook until the raw falvor of coconut goes away and now add sesame        
         powder and cook for few more minutes in medium flame.


      6. Now add tamarind juice and cook for few more minutes. 
      7. When the mixture is throughly cooked add chili powder and salt.


      8. Now add Dal mixture to the pan and mix well. Cook for few more minutes and off the stove.


It's not only healthy but also tastes yummy.....enjoy this dish with rice/ roti....hope you all like it!!!!!!!!

Banana Orange dessert

Hello folkes,
    ThnQ for your well wishes. I do not know that bloggywood friends show this much sisterhood. I find many of my folks asking about our safety. This blog and you all have become very much part of my life now.

Yesterday was a very bad day, though there was a tornado watch, I never thought it would turn to a warning. Me and my hubby hold hand in hand and just prayed to god. God answered our prayers.

Really that was terrific. Now we are safe and happy, bcoz tornado didnt not cause any loss to common wealth of Kentucky. Now you say enough of the story ;)...., so i'm stopping and presenting you the yummy and colorful dessert.

Banana-Orange Dessert:
Ingredients:
Banana's--6 small size/ 3 medium size (Ripe and Sweet banana's should be prefered)
Orange juice-1cup (160ml)
Butter--1/2 slice
Brown Sugar/ Grated Jaggery-1cup (160ml)
Dry fruits- walnut, Almonds, Cashew nut (all together 1/2 cup)
Elachi/ Cardamom powder-1/2ts (optional)

Method:









  1. Peel out bananas and make them into medium size slices and keep aside.
  2. Take a deep bottom vessel and melt butter then, add dry nuts and saute until they turn into golden brown.
  3. Add Orange juice to the melted butter and boil this mixture under medium flame for about 5min.
  4. Now, add Brown sugar/ jaggery and mix well. Boil this mixture until the consistency of the mixture turns medium thick.
  5. Add Banana and mix throughly. Cook this mixture for about 10min in simmer. 
  6. Finally finish it by garnishing with cardamom powder (optional )...I didn't use it as I don't want to loose the aroma of orange in my dessert.

Kids will love it.....we enjoyed this dish.....hope you all like it... :)
