Mushroom samosa

Whenever you remember samosa, I know you'll start drooling!!!Afterol it is favorite for everyone!! But suddenly you also remember calories, then you limit yourself to only one!!! Here is an interesting idea make your samosa in a healthy way, so that you can enjoy every bite of it and never worry about calories!! Yes, this mushroom samosa is yummy and low calorie compared to regular samosa!

Ingredients
Mushrooms chopped to large pieces-1cup
Boiled potato sliced-1cup
Green chili-3 and garlic cloves-2 crushed together
Salt to taste
Turmeric pinch
Amchur powder/ dry mango powder-1/2 tbsp
Chopped cilantro/coriander leaves-1/4 cup
Onion chopped-1/2cup
Jeera/cumin seeds-1/4 tbsp
Oil for deep fry and as required
Maida/ all purpose flour-2 cups( makes 6 samosa)
Voma/ vama/ajwain-1/2 tea spoon
Salt to taste

Method
Heat 2 tbsp of oil in a pan and add cumin seeds when they splatter add onion and cook till they are tender. Add pinch of turmeric, salt, amchur powder, green chili-garlic paste and mix well. When the mixture is well cooked add potato and mix well. In another pan heat 1tbsp of oil and add mushroom slices and keep cooking them till they are well cooked, mushrooms will release water while cooking carefully remove all the water and keep frying them till they do not release any water, add this mushrooms to potato curry and finally add cilantro leaves mix well and keep it aside. You need not have to cook this mixture again.

To prepare dough for samosa take flour in a bowl and combine salt and ajwain/ vama seeds and mix well. Add 2 tbsp of oil and mix well, finally add water and mix it like a soft chapati/. Roti dough.
To make samosa roll out the maida into chapati/ roti, and keep the mixture in the middle and shape it like samosa. Fry it under medium flame and seeve hot!!

Chickpeas burger Patties (Vegetarian Burger) in Indian style

These days I am kind of falling in love with the western food!!!! and I think this is because it is easy to make and I can modify to whatever taste I would like to. Today I made this yummy burger patties they are really delicious and I bet you will love it too!!! The main reason behind making this burgers is my hubby, he has been asking to make sandwiches for the lunchbox, but I felt only sandwich is not good enough for a lunch as he does a laborious work every day in the office. So, I wanted to make a highly proteinaceous and yummy recipe and that is how I came up with the idea of these delicious burgers and now I'm sharing with you!

Here is the recipe
Ingredients
Chickpeas/Garbanzo beans/ senagalu(white)- 2cups(When measured with 200ml cup)
Cumin seeds-1/2tbsp
Red chili powder-1/2tbsp
Salt to taste
wheat flour-2tbsp
Chopped coriander leaves/cilantro- 1/4cup
grated carrot-1/2cup
Onion finely chopped-1/4cup
Grated ginger-1/2tbsp
chopped garlic-1/2tbsp
Walnut-1/4cup

Method:
Take chickpeas in a medium size bowl and wash them. Soak the overnight in  a water and boil them. Do not cook them till they become mushy. Drain water and take them in a mixie/food processor then add all the above ingredients except carrot, cilantro and onion and grind it. Finally add remaining ingredients and mix well. Taste the mixture and adjust to your taste. If you want to make little Indanised version add chat masala/dry mango powder. Now take handful of mixture and roll it in to a sphere and flatten it. Finish it on all sides so that it remain smooth and there is no air inside it. Spread oil on all sides of the pattie and fry on a griddle. Yummy burger patties are ready!!!

Tip: Kindly note it please, these burgers are very tender, they break easily since there is a very little binding, if you do not mind having egg then I recommend you to add one egg along with onions and carrots and mix well. Egg acts as a super binding agent and also adds moisture and great texture to your patties. If you do not like adding egg then add more wheat flour, if your patties are tender.

For making burger I used 1tomato, 1slice of american cheese, 1tbsp of mayo, 1lettuce leaf and 1 onion ring with whole wheat bread. You can prepare it to your taste.

Vegetable Spring rolls with Indian Flavors

These are the delicious rolls, that are crisp out side and soft inside. The filling inside the spring rolls can be made to our taste. I like Indian flavors so I prepared it in Indian style.here re the few tips for making the perfect spring rolls. Adding more spices will destroy the taste of the spring roll. Less amount of spices including salt will make you to enjoy the beautiful and unique flavor of a spring roll. Do not stuff your spring roll with lots of stuffing mixture, just add a spoon full, it should be good. While rolling a spring roll, roll it tight so that no spaces are left inside the filling. While frying it try to fry it on a medium heat so that the inner part also gets cooked.

Ingredients:
Serves:2
Serving size:3
Spring roll sheets: 6
Cabbage finely chopped-1cup
Tofu shreaded-1/4cup(optional)
Carrot shredded-1/2cup
Onion finely chopped-1/2cup
Spring onion- chopped-5
Grated potato-3tbsp
Ginger paste-1tea spoon
garlic paste- tea spoon
Cumin powder-1/2tbsp
pepper powder to taste
Salt to taste
1tbsp of maida/all purpose flour mixed with 2tbsp of water-to stick edges(You can use egg wash if you wish)
oil-1tbsp
Oil for frying spring rolls

Method:
Heat oil in a pan and add all vegetables and cook by closing the pan, keep stirring them in between. when the vegetables are 80% done add ginger, garlic, cumin powder, salt and pepper powder. Addition of soy sauce is optional, if you would like to add 1tbsp should be enough. Mix all the ingredients well and cook in the open pan, allowing all the moisture to escape. The filling should look dry, if there is still any moisture left, keep stirring and cook it on medium flame till it becomes dry. Now take the curry and allow it to cool.

Take the spring roll sheets out of the refrigerator and cover them with a damp cloth, this will help them from drying out. Now take one sheet and put the filling on one corner as shown, roll it tightly and stick the final edge with all purpose flour.
Heat oil in  a skillet and fry them under medium heat and enjoy with ketchup/tomato sauce. Generally these spring rolls are deep fried, if you wish you can deep fry them either.

Ravva dosa with carrot and onions

Ravva dosa is one of my hubby's favorite breakfast. For me it is favorite fir two reasons, first is it is an instant delicious breakfast and the other reason is that it is easy to prepare. If you are craving for dosa this is perfect for you. Kids will love it too!! Here is the recipe( you can make capsicum dosa in the similar way and you can find it's recipe right here)
Ingredients
Ravva( fine souji/ bombay ravva) 1 cup
Maida/ all purpose flour 1/4cup
Rice flour 1 cup
Cilantro/ coriander chopped 20 springs
Ginger grated 2 tbsp
Carrot finely grated 1/4 cup
Onions finely chopped 1 cup
Oil for roasting
Salt to taste
Black pepper powder 1/2 tbsp
Green chili finely grated 1/2 tbsp

Method
Mix all the ingredients except onions with water. The consistency of the batter should be very thin just like buttermilk. Check taste for salt. Heat 2 tbsp oil in a flat pan. Sprinkle hand full of chopped onions on Pan. Now take hand full of batter in hand and sprinkle on a pan to make dosa. Add some oil on to the sides of the dosa and cook till it turns light brown. Flip it and cook other side till it is completely cooked by adding some oil from sides of the dosa. Take out from the pan and serve hot with tomato or palli chutney. Hope you like my recipe.
Tips: use thin spatula for flipping dosa. If you are trying for the first time do not worry practice. If your pan is sticky take and onion and cut it to half and rub it on the pan. This way onion juice creates a non sticky layer on the top of the pan. hope you find these tips useful.
Finally be prepared to clean your stove when you make this dosa...look at mine how awful it became :(

Muthia( Indian healthy snacks)

Muthia is new to me. This is the first time I gave a try. They came out really good. My hubby who never like to try new varieties tried this on my request and he liked it a lot. Now this snack is approved in my home and I am happy that I have got another healthy snack item in my kitchen menu that I can prepare very instantly. Muthia is similar to khandvi but it has got cabbage extra. Believe me it tastes awesome.
Without being late coming to the recipe.
Ingredients
This recipe will serve 2
Cabbage washed and finely chopped 2 cups
Basin/gram flour/senaga pindi- 1cup
Oil 4 tbsp divided
Salt to taste
Green chili paste 1 tbsp
Fresh Fenugreek leaves chopped 3 tbsp(or kasurimethi powder)
Cumin seeds 1/2 tbsp
Citric acid 1/4 tbsp or eno fruit salt 1/4 tbsp
Turmeric 1/8tbsp

For seasoning
Sesame seeds/ till/nuvvulu- 1tbsp
Whole red chili 2
Mustard seeds 1/2 tbsp

Method
Mix all the ingredients together leaving the seasoning ingredients. The water in the cabbage should be enough for mixing or you can add little water if you require. The consistency of the batter should be little thicker than idli batter. Now grease the idli plates( microwave safe) and pour the batter in to the moulds and cook in microwave for 5 min and check with fork. If the fork come out clean they are done else cook for another 2 min. It took 7 min to cook my muthia. You can make them in ordinary cooker or steamer, if you are using ordinary cooker do not keep whistle on top and cook for 10-15 min like idli. Now when the muthia's are ready take them out let them cool and cut them to 4 equal parts. For seasoning heat 2 tbsp of oil in a pan and add mustard seeds when they splatter add red chili and sesame seeds when they are done cooking add Muthia and sauté them till they turn golden brown. Finally garnish with cilantro if you wish. Hope you like my recipe.

Vegetable Hakka Noodles- Indian Style

Me and my brother used to have these noodles on a street side Chinese fast food center. Me and my brother are big noodle fans. I love Chinese because it is very much near to Indian food, and another thing is it can be modified to the taste you like. Most of the fast food sold in India is Indo-Chinese style compared to western food such as pizza's and burgers. There are two reasons for this, first is Chinese food is very cheep and is very much near to Indian food and the other is the availability of fast food centers. Today there are thousands of Chinese fast food centers available on streets. I am surprised to see it even in my grand mother's village too.
Hakka cuisine is the cooking style of the Hakka people, who are primarily found in southeastern China, but also may be found in many other parts of China, as well as in the Chinese diaspora. Hong Kong, Indonesia, Malaysia and Singapore have numerous restaurants serving Hakka cuisine

Ingredients:
Recipe serves 2
Hakka Noodles-250grams (You can use regular noodles too)  
Aginamoto(Mono sodium glutamate)-1/2tbsp
Oil-2tbsp
Pepper powder-1/2tbsp
Cabbage- Thinly sliced-1 cup
Carrot grated-1/2cup
Green peas-1/4cup
Onion-cut in to thin long slices-1 cup
Potato- grated-1/2cup
Capsicum-cut into thin large slices-1/4cup
Mint leaves-2 springs(optional)
Green chili-2
Tomato puree-1/4 cup
Soy sauce-2tbsp
Chili garlic sauce/tomato sauce-3 tbsp
Salt to taste
Ginger garlic paste(optional)-1tbsp


Method:
Boil noodles in a water by adding very little salt. When the noodles are done, strain them and keep them for few minutes under cool running water. This way the noodles remain non sticky. Now take a pan and heat oil add all vegetables and saute them under medium flame.       When the vegetables are done add Ginger garlic paste(Optional), mono-sodium glutamate, salt, pepper powder, soy sauce, chili garlic sauce/tomato sauce and mix well. Now add noodles and mix well. While mixing noodles use two forks and mix with two hands, in this way the noodles won't mash up. Finally squeeze some lemon juice if you wish and serve hot with tomato sauce.

happy Independence Day salad

August 15th is the Independence day for India. This day is the festival that is unrelated to community, caste, religion or state. This is celebrated by all Indians with patriotism and due respect to their nation. On this day I would like to post this yummy salad. It contains all the colors in Indian Flag.

Ingredients:
Carrot grated-1/2cup
Onions  thinly sliced-1/2cup
Capsicum grated-1/2cup
Salt to taste
Butter-1tbsp
Pepper powder-1/2tea spoon
Garlic finely minced-1/2tbsp

Method:
Cook capsicum, carrot in a separate bowl with water. Filter excess water. Take cut onions, grated capsicum and carrot in a bowl. Melt butter in a pan, then add garlic and fry till it attains golden brown. Add this dressing on top of  the vegetables and sprinkle salt and black pepper powder to taste. Healthy and yummy recipe is ready to serve.

Home made salsa recipe

Salsa is a kind of dip/sauce a very famous and healthy Mexican food. I am a vegetarian, it is really hard to find the vegetarian food in Kentucky. I really had a bad experience in one china restaurant "East meets West", that day when I have been there, they arranged a buffet system. That means we have to serve our self and the meals will be placed at one place. My hubby is non vegetarian and he served what he like and sat on a table waiting for me. I went there and I was really confused with the vegetarian food and non vegetarian. In noodles I saw a shrimp, when I asked the server he said it was vegetarian noodles but some one by mistake would have thrown that in noodles. My God!!! that was really horrible, because the noodles was only food that are vegetarian in that restaurant. I will never visit that restaurant again. One fine day my hubby took me to Mexican restaurant and I found really good vegetarian dishes there, they first served Salsa with triangles. Wow that was fabulous. From then that became my favorite. Enough of the story and now let's see the preparation.

Ingredients:
Fresh tomato puree-1 cup( just take fresh tomatoes and grind them to paste)
green chili- different chili have different heat so take depending on the heat you want(Finger peppers-1 or jalapenos-1/2 or Indian green chili-2 in number)
Garlic cloves- 3
Salt to taste
Finely chopped onions-1/4 cup
Finely chopped cilantro-10 springs
Lemon juice-1/2 lemon full squeezed out
Vinegar- 1tbsp
Pepper powder-1/4tbsp

Directions:
Take tomato puree in a bowl. Grind green chili, little salt and garlic cloves in a hand grinder and add it to the tomato puree. Add cilantro, onions, lemon juice, vinegar, pepper powder and salt to taste. Mix well and serve with tortilla triangles.

Pavbhaji- Maharastra's famous chat

Pavbhaji make to to remember my college days. I used to have these wonderful chat on streets. Our gang adda used to be near the "chaat bandi's" near my college. Since today is the friendship day I'm posting this wonderful recipe. I love pav bhaji especially when it is raining. I just lost in nostalgia, while writing this post. This dish is to my all lovely college friends and wondeful friends of Bloggywood.

coming to recipe,
Ingredients:
Potato- pealed and cut-1 cup
Tomato diced-1/2cup
cauliflower cut-1/2cup
capsicum cut-1/ cup
green peas-1/4cup
Carrots cut-1/2cup
onions chopped-1 cup
red chili powder-1tbsp
salt to taste
Pav bhaji powder-1 tbsp
Ginger garlic paste-1tbsp
Vegetable oil-2tbsp

Method:
Boil all the vegetables in little salt water, drain the water and keep them aside. Do not throw the drained water, store them for gravy. Now heat 2tbsp of oil in a pan and add onions and fry till they turn transparent. Now mash all the boiled vegetables partially and add them to the cooked onions and mix well cook by closing vessel under medium flame. When the mixture is well cooked add pavbahaji powder, red chili powder, salt to taste and enjoy with the butter toasted buns. If you want little more spicy add coriander and cumin powder 1/2 a tbsp each.
