Egg Biryani with tangy twist

This is very simple and easy recipe, I made this for my hubbys lunch box. It is quick one pot meal. I love to have this any time. It is spicy and tangy biryani. Hope you will love it too!!!

Ingredients:
Eggs-2
Onions-chopped-1cup
Tomatos-chopped-1cup
Green peas-1/4cup
Green chilles 2
Mint leaves-1/4cup
Bay lef 1
cinnamon 1 inch stick
Cardamom 2 pods
chopped ciliantro 2t.s
Cumin seeds 1tbsp
Mustard seeds 1tbsp
Chana dal 1/4ts
Urad dal-1/4ts
Turmeric Pinch
Salt To taste
Chilli powder 1/2t.s
Coriander powder-1/2ts
Cumin powder-1/2ts
Garam masala-1/4ts (optional)
Red chilli 1tbsp
vegetable oil 2tbsp
Tamarind-lemon size

Method
  1. Boil Eggs and remove shell, keep them aside.
  2. Heat a thick bottom non stick pan and add 2ts of vegetable oil.
  3. Add Cumin seeds + Mustard Seeds + Red chili + chana Dal + Urad dal and wait until they splutter.
  4. Add cinnamon+cardamom+bayleaf+ onions + green chilies and saute until they get half cooked. Mean while soak tamarind in water.
  5. Add tomatos and cook under medium flame until they get cooked completely.
  6. Squeeze out tamarind water from the soaked tamarind and add this water to the cooking mixture.
  7. Add all curry powders chili powder+salt+coriander powder+cumin powder+green peas+mint leaves and cook for 5min under medium flame.
  8. Add water and bring to boil.
  9. Add garam masala at the if you prefer it spicy.
  10. Add rice and cook like a normal rice.
  11. When the rice is about to cook take the boiled eggs and make slit with knife on the top and place them inside the rice and cook under low flame.
  12. Finally garnish with cilantro.

Tips and Recipes for Handy breakfast with bread for busy bugs!!!!!

Hello every one it has been a long I did not make any post on recipes. It is because I am busy with shifting my stuff to a new apartment near to my college and damn thing is that my final exam and assignment were on the same week. So I was busy winding up with all those stuff. Now am free blogging!!!! I started enjoying the scent of freedom!!!

Now coming to the handy breakfast, this delicious treats fills the belly of your hubby, boyfriend or your child who get up early morning and rush to work with empty tummys. I present to you some excellent handy meals that they can have while driving to their destination.

You can make them for lunch box for your kids or husband.

Tip 1: Always keep a pack of fresh bread and half a dozen eggs at home.

1. Handy Mayo Sandwich(For Vegetarians)
Ingredients
Bread 2
mayo-1tbsp
onions very finely chopped-2tbsp
tomato very finely chopped 2 tbsp(remember to remove the juicy middle part when you cut it)
salt pinch
pepper powder pinch

Method:
Toast the bread for 2min or till it gets golden brown. Mean while take a small mixing bowl and add onions, tomato, salt and pepper, mix all the ingredients together. When the bread is ready, apply this mixture as a layer and cover it with another bread slice. Microwave this sandwich for 30seconds. Wrap it in a aluminium foil and give them to hand. They will enjoy the taste of mayo with crispy bread and onion.
Tip 2: If you do not have mayo then add butter instead.

2. Omlet/ amlet/ Omlette and bread

Ingredients
Eggs 2
Bread slices 2
onions very finely chopped-2tbsp
tomato very finely chopped 2 tbsp(remember to remove the juicy middle part when you cut it)
salt pinch
pepper powder pinch
Cilantro/Coriander leaves finely chopped-1tbsp
Milk 2tbsp

Method

Break open the eggs and whisk them till they become foamy. Add milk and all other ingredients and mix well. Take a pan and heat 2tbsp of oil in it. Make sure that you spread the oil all over the pan and line it with thin coat of oil. Pour the egg mixture on the hot pan like you pour for making omlet. When the amulet starts cooking from the bottom, take your bread and toast it. Now take the toasted bread and press it on the top of the cooking omelet and soak the uncooked egg. now lift the omlet up and place the two bread slices on the pan and flip the omlet on them. Now the uncooked omlet is on top of the bread slices. Cook it under low flame for 2min and turn off the stove. Wrap them in a foil and now the handy break fast is ready. The bread after soaking in the egg and there by cooking will give a very flavorful bite!!!! you'll definitely like it!!!!

Kheera Doskaya ( Cucumber) Curry

Kheera curry, This is the first time I made experiment with kheera. The other day I was talking to my best friend who lives in Texas, she told me about this recipe. First I thought it may not be good but after preparing this curry, I felt it would be difficult for any one to trace the difference between bottle gourd(Sorakaya) and this cucumber. I love it!!! hope you will love it too!!!

Ingredients:
Medium sized pealed and cubed cucumber-2cups
Tomato---------------------1big
Onions chopped------------1 cup
Coconut powder-----------2ts optional
Cumin seeds ---------------few
Mustard seeds--------------few
Ginger garlic paste----------1ts
Oil--------------------------2ts
Chili powder----------------1/2ts
Salt---------------------to taste
Cumin powder-----------1/2ts
Coriander powder--------1/2 ts
Turmeric-----------------pinch
Garam masala------------1/4 ts optional

Method
  1. Heat 2ts of oil in a pan.
  2. Add Cumin and mustard seeds and allow them to splutter, then add chopped onions and fry the until the onions are half cooked
  3. Now, add ginger garlic paste and turmeric and cook for 2 min.
  4. Now, add Cucumber pieces and cook by stirring for every 1 min, until all the pieces shrinks to half of its original size.
  5. Now add tomatos and cook untill they are finely done.
  6. Add chili powder, salt,cumin, coriander powder and coconut powder and cook in a closed pan for about 2-3min and here if u want some gravy you can add water at this point. 
  7. After 2-3 min curry is ready to serve, garnish it with cilantro.
It serves as a best combination for roti or rice. Please leveve your comments before leaving!!!!

Masala vada

Methi garelu or nethi garelu are very famous breakfast in south India... Dahi vada/perugu vada are most famous evening snacks for north Indians. As a whole methi vada is very favorite food for Indians. I love all kinds of vada made out of this dough!!! This masala vada goes good with dahi/curd/yogurt. You can also have them  with out chutney/yogurt.

Ingredinets
Ingredients:
Split Urad dal-2cups(when measured iwth 160ml cup)
Coconut- shreaded-2ts (optional)
salt to taste
Pepper powder-1/2ts
Mint leaves/pudina-1/4cup
cilantro/coriander leaves-20springs chopped
green chili-2 finely chopped
onion-1/4cup finely chopped
oil for deep fry
baking soda(pinch-optional)

Method
  • Soak  Urad dhal for at least 6 hrs.
  • Drain the water and grind it in a blender to a smooth batter
  • Use very little water in the course of blending.
  • More water will ruin the vadai shape & texture
  • At the end, add all the above mentioned ingredients and mix well with slow speed to aerate your batter.
  • TIP: To find if the batter is well aerated, just drop little batter in a bowl of water. If it sinks, batter needs to be aerated. If it floats, it is well aerated.
  • Aeration will yield fluffy soft vadas.
  • Heat a pan of oil - keep it in medium flame
  • To check if the oil is hot enough, drop a small pea sized batter in the hot oil - if it sizzles and rises to the top immediately, oil is good to go
  • Wet your hands in cold water, gently scoop the batter with your bare fingers, and roll up into a ball and gently make a hole using your thumb, drop it into the oil  .
  • Always remember to fry them under medium flame, high flame will burn vadas out side leaving raw inner part.
  • In couple of minutes, flip the vada upside down and let it fry until both sides turn golden brown
  • Drop the vadas minimum 3 in a batch and using a perforated laddle scoop them all onto a paper towel to absorb the excess oil
  • Serve hot with chutney
  • To keep the vadas crisp for few hours, you may either preheat the oven to 250 degrees - turn it off and keep the vadas in or just keep cover the hot oil pan (after frying) with plate and place the vadas over the plate and cover up with another plate.
