Samosa- yummy snack

Samosas are my favorite snack during tea time. I even like to enjoy them when raining. They are crispy and yummy. Although there are many kinds of stuffing's made in INDIA, I always like alu samosa. 
Ingredients:
Boiled, pealed and diced to small cubes-2cups
Carrots boiled and diced-1/2cup
Green peas-1/4cup
onions diced-1/2cup
Cumin seeds few
Ajwain-1/2 tea spoon (very little)
Turmeric-1/4ts
green chilies very finely chopped-3ts
salt to taste
chat masala/ pudina chutney powder-1ts
cilantro-10springs chopped


Method:

  • First prepare the dough for the outer crest of the samosa.
  • for crest preparation take the all purpose flour/ maida in a mixing bowl along with ajwain, salt and 2ts of vegetable oil.
  • Mix all the ingredients together, It is better to use hands instead of spoon or spatula, the oil should coat the  flour very well, then add water and knead like pizza/ chapati/roti dough.
  • Rest the dough for 15-20min, mean while prepare the stuffing.
  • For stuffing, heat 2ts of vegetable oil in a pan and add cumin seeds and allow them to splutter.
  • There after add onions and green chilies and saute until onions become transparent.
  • Now add turmeric and green peas and garlic and cook this mixture in a open vessel under medium flame until the green peas are well cooked, then add salt and chat masala/ pudina chutney powder and cook for few min.
  • Now add potato and carrot and mix well, cook this mixture for about 10min under medium flame.
  • Finally add cilantro and turn-off the stove.
  • Now take the dough and divide in to equal parts and roll each part like disc .
  • Cut each of the disc shaped dough into half, roll each half into a cone shape and fill with potato curry and wet the edges of the cone with little water and close it.
  • repeat this steps for all samosa's.
  • Heat oil for deep for in a pan and fry these samosa's in medium flame.

Enjoy with tea or pudina chutney.
