Andhra Gongura Pacchadi/ chutney and ONE USEFUL BLOGGER NOTE-Favicon

Gongura! is flavorful and tangy leafy vegetable, mostly available in south India especially Andhra. I love this chutney very much, because of its tangy taste. Just with chutney I can finish the full bowl of rice. Few days back I got it in Indian grocery store I already made Gongura and chanadal curry and now I made this wonderful chutney.



Ingredients
  • Big bunch of fresh gongura / red sorrel (wash and separate leaves from the stalks and leave them out to dry)
  • 10 whole dry red chilies (or you can use green chili)
  • 11/2ts cumin seeds
  • 11/2 tbsp coriander seeds
  • 5 garlic cloves
  • 2 tbsps oil
  • salt to taste
Tempering
  • 4 tbsp oil (pickle made with red chilies needs more oil than green chilies)
  • 1 tsp mustard seeds
  • ½ tsp cumin
  • 2 garlic cloves
  • 2 whole dry red chillies
  • 1 stalk of curry leaves (optional)
Onions for seasoning.

Directions:
First dry roast cuimin seeds,Red chili/green chili (note: If you are using green chili roast them with 1ts of oil) and coriander seeds, and add them to mixe/ grinding jar. Now heat 2ts of oil in a pan and add gongura and saute until it changes its color and becomes mushy. Let it cook and shift this in to the grinding jar. Add salt to taste and gring this mixture well. you can add water if necessary. take the grinded mixture into a serving bowl. Now prepare the tempering/ thadka. Take a pan and heat oil add cumin+mustard+red chili+curry leaves and garlic cloves one by one and saute them until the garlic attains nice brown color. Add this tempering to the gongura chutney. Tempering/ Tadka/Talimpu gives the nice flavor to the chutney. Slice the onions to cubes and mix well with the chutney, after an hour onions become tangy and crispy. I love to have onions in this chutney.
