Sambar- with Drumstick

Munaga/ munakkada are very nutritious vegetable. They are rich in Vitamin A, protein, iron, potassium and more. Drumstick sambar is the most popular Indian dish made with drumstick.

 Exclusive to the southern part of India, this dish is served with idli’s for breakfast and with rice for meals. Drumstick is cooked in yellow lentils called toor daal in India along with a number of other vegetables.This is a spicy tangy dish that is seasoned with a mix of spices called "sambar powder" (Available in Indian stores). Generally sambar is done with long list of vegetables that could go into the making of drumstick sambar are carrot, tomato, radish, okra, eggplant, potato and onions. Sambar is seasoned with a pinch of asafoetida and a tea spoon of fennel seeds. It gets its sour taste from tamarind and spiciness from chili and black pepper powder contained in the masala.

Ingredients
  • Toor dal or yellow split lentil – 1 cup
  • Tamarind pulp or thick juice – 1 table spoon (or soak a small lemon size tamarind in ¼ cup of water for five minutes; squeeze and filter the juice)
  • Drumstick -10 pieces (3 inches each)
  • Tomato – 1 no
  • Onion – 1 no
  • Curry leaves and coriander leaves – few
  • Asafetida powder (hing) – ½ tea spoon
  • Oil – 1 tea spoon
  • Green chilli – 2 no
  • Red chili powder-1/2 ts (optional)
  • Salt – according to taste
  • Sambar powder – 2 tea spoon full or
  • if you don’t have sambar powder, use items below
    • Turmeric powder – ¼ tea spoon
    • Red chilli powder -  1 tea spoon
    • Coriander powder -  2 tea spoon full
  • Seasoning
    • Mustard, cumin seeds – ¼ tea spoon each
    • Red chilli – 1 no
    • Onion finely chopped-1/2cup
    • curry leaves – few


Directions:
Take toor dal in a pressure cooker and wash it, then add 2cups of water. Now add drumsticks, chopped tomato, chopped onion, green chili, turmeric and cook for 3 whistles. Now wait until all the gas escapes from the cooker and remove the lid. Scoop out drumsticks into separate bowl and mash dal. Now add sambar powder, chili powder, salt to taste, tamarind water and mix thoroughly. cook this mixture under medium flame for 5min and add drumsticks. Now prepare seasoning, heat 2ts of oil in a pan and add cumin, mustard and red chili when they begin to splutter add onion and saute this mixture until onions turn golden brown under medium flame. Finally add curry leaves and transfer this seasoning to the dal and mix well. Garnish with cilantro and serve with rice/idli/dosa. 
This will taste too good after 4hrs.
