Bhendi tomato curry

Bhendi or bendakaya or lady's finger or okra call by any name, make any kind of recipe with it my father will like it. When he goes to the market he will bhendi is must in his list of vegetables. I really didn't know that my dad loves bhendi that munch until I got to see one day when he brought bhendi from the Market when it was 40rs. a KG. This simple recipe is dedicated to all the bhendi lovers like my dad. Coming to recipe.
Ingredients
Bhendi washed and cut in to 1 inch pieces-2 cups
tomatoes finely chopped-1 cup

Chopped onions-1/4cup
Green chillies-2
chopped cilantro-2t.s
Cumin seeds-1/2ts
Mustard seeds-1/2ts
Chana dal-1tbsp
Urad dal-1 tbsp
Turmeric-Pinch
Salt to taste
Chili powder-1/2tbsp
Red chili-1
vegetable oil-2ts
red chili powder-1tbsp
cilantro/coriander-10springs chopped
Directions:
For bhendi to be non sticky microwave the pieces for 5min by wrapping the top of the microwave dish with plastic wrap. Heat 2ts of oil in non stick pan and add cumin + mustard + chana + urad dal+ red chili and wait until they splutter. Add onions, Ginger Garlic paste and saute until they the onions become transparent. Add turmeric and cook for few min and add tomato. Mix well and cook till the tomato is completely done. them add microwaved bhendi slices (If you do not have microwave add directly with out cooking but do not stir it continuously. Stir gently making the curry upside down for every 3min.). Mix well. Cook for another 5min and add salt, chili powder and cook for 3min. FInally garnish with cilantro and turnoff the stove. Shell curry puffs

I bought this pastry shell sheets in walmart frozen section yesterday. They are really awesome unlike puff pastry sheets they do not need any preparation. They are like instant snack item. You can fill which ever filling you would like to. I always like potato cheese filling in my pastry. Coming to recipe.

Ingredients
Puff pastry shells 6( you will get 6 per pack)
Potato boiled and mashed 1 cup
Green chili paste 1/4 tbsp
Oil 2 tbsp
Salt to taste
Cheese as you require
Cilantro or coriander

Method
Preheat the oven to 345F. Prepare filling. Heat oil in a pan and add Finley chopped onions and sauté till they turn tender then add add green chili paste, salt & turmeric and sauté till raw flavor of chili goes away. Then add mashed potato, mix well and cook for 1min turn of the stove. Take the pastry shells in a baking tray ( no need to grease it) and bake for 10-15 min till they turn golden brown. Now when the shells are baked top circular portion ( just like a lid) of the pastry will get separated out remove it. Then you van see the dome shaped shell. Fill with cheese and potato curry made. The Best Chocolate Cake

Yesterday was my birthday and this time I wanna try my favorite cake. I know that my hubby will bring a surprise cake but I wanted to try this one from many days and I think this is the prefect time to enjoy chocolate cake. I made little changes in the general version of the cake and it tasted awesome. It was smooth fluffy and delicious. Even my hubby enjoyed this cake more than that he bought in the store. Here is the recipe.

Ingredients:
All purpose flour 2cups
Cocoa powder 1/4cup
Granulated sugar/powdered sugar 1.5 cup
milk as required for mixing
eggs 3 or 2(if you are using large eggs)
baking powder 1/2tbsp
baking soda 1/2tbsp
salt 1tea spoon
vanilla essance- 1tbsp
kismis/raisins hand full (yellow raisins)

Method:
Preheat the oven to 350F. Take a large mixing bowl and at first mix all the dry ingrients
together. take flour, sugar, baking powder, baking soda, salt and cocoa powder. Mix well. Then in another bowl take milk(nearly 1/4 cup),oil, vanilla essance and break open eggs. Whisk them till they are mixed throughly. Pour this liquid mixture on to the dry ingredients and beat with electronic whisker or hand mixer. Finally add raisins and mix well. Take a round baking tray and grease it with oil (or non stick spray and you can even line with parchmen paper). Pour this batter on to the baking tray and bake for 15-20min. Insert a tooth pick and when it comes out clean then it indicates that the cake is done. Decourate your cake with the frosting you like. I decorated with chocolate frosting.

Tandoori cauliflower( wonderful evening snack)

Cauliflower is one of the best vegetables that tastes very different with a very slight modification. I was eager to try this recipe from the time one of my friend told about this. This is super good and one of the finest way to enjoy cauliflower.
Ingredients
Serves 2
Cauliflower washed and separated in to medium size florets 2 cups
Tandoori masala 2 tbsp
Oil 30ml
Salt to Taste
Ginger garlic paste 1 tbsp
Green chili paste 1/2 tbsp
Gram flour/ besan/ Senega pindi 2 tbsp
Paprika or red color pinch
Onions longitudinally chopped 1 big

Method
Take the cauliflower in microwave safe bowl. Microwave the cauliflower for 5 min by covering it with plastic wrap leaving some space for the vapor to escape.

 Take a large mixing bowl and mix all the ingredients except cauliflower and onions.

Then add cauliflower and onion. Mix well water from the cauliflower and onion should be enough.

Take a baking tray and cover with aluminum foil and grease it with oil. Now take each individual piece of cauliflower and arrange on the tray along with onions.

 Preheat oven to 300F and bake for 15 min or bake untill the cauliflower appears dry. The cauliflower turns crispy out side and remains soft inside.

Muthia( Indian healthy snacks)

Muthia is new to me. This is the first time I gave a try. They came out really good. My hubby who never like to try new varieties tried this on my request and he liked it a lot. Now this snack is approved in my home and I am happy that I have got another healthy snack item in my kitchen menu that I can prepare very instantly. Muthia is similar to khandvi but it has got cabbage extra. Believe me it tastes awesome.
Without being late coming to the recipe.
Ingredients
This recipe will serve 2
Cabbage washed and finely chopped 2 cups
Basin/gram flour/senaga pindi- 1cup
Oil 4 tbsp divided
Salt to taste
Green chili paste 1 tbsp
Fresh Fenugreek leaves chopped 3 tbsp(or kasurimethi powder)
Cumin seeds 1/2 tbsp
Citric acid 1/4 tbsp or eno fruit salt 1/4 tbsp
Turmeric 1/8tbsp

For seasoning
Sesame seeds/ till/nuvvulu- 1tbsp
Whole red chili 2
Mustard seeds 1/2 tbsp

Method
Mix all the ingredients together leaving the seasoning ingredients. The water in the cabbage should be enough for mixing or you can add little water if you require. The consistency of the batter should be little thicker than idli batter. Now grease the idli plates( microwave safe) and pour the batter in to the moulds and cook in microwave for 5 min and check with fork. If the fork come out clean they are done else cook for another 2 min. It took 7 min to cook my muthia. You can make them in ordinary cooker or steamer, if you are using ordinary cooker do not keep whistle on top and cook for 10-15 min like idli. Now when the muthia's are ready take them out let them cool and cut them to 4 equal parts. For seasoning heat 2 tbsp of oil in a pan and add mustard seeds when they splatter add red chili and sesame seeds when they are done cooking add Muthia and sauté them till they turn golden brown. Finally garnish with cilantro if you wish. Hope you like my recipe.

Potato/ auloo paratha-

Paratha, i'll start drooling by just listening to this name. I tried this recipe several times and failed. Just like the saying try and try until u succeed I tried it many times and this time I got perfect Paratha. In this post i'll give you some tips which will yield a perfect Paratha.

Ingredients
( makes 8 parathas)
Potato 2 large boiled
Green chili paste 3/4 tbsp
1/2 Onion finely grind
Coriander powder 1/2tbsp
Cumin powder 1/4 tbsp
Turmeric pinch( optional)
Salt to taste
Cilantro/ coriander chopped 2 tbsp

For dough
Wheat flour 250grms
Water 130ml
Salt 1/4 tbsp
Oil as required

Method
First we will see the dough preparation. Take flour in a large mixing bowl and add salt. Mix well. Now add 2 tbsp oil this will Smoothen the dough and mix well such that the entire flour gets coated with a tinge of oil. Now start kneading by adding little water. Keep adding until u get a soft dough. Generally 55% of water is required for the dough. That us if you take 100grms of dough you will require 55ml of water to knead it. When you knead it perfectly then apply some oil on top of the dough on all sides and rest it for about 15 min. This will prevent evaporation of excess water from the dough and stopes it's surface from becoming dry.
For stuffing:
Grate the potato with a large pore grater. You can mash it as well but while mashing we get some clumps which will tear the Paratha while rolling. Grating will yield more smooth stuffing. Now heat 2 tbsp of oil in a skillet and add grinded onion, ginger garlic paste and keep sauting till the raw flavor of onion goes away. Then add turmeric, cumin powder, salt and coriander powder and mix well. While all the ingredients are finely done, add potato and cilantro and turn off the stove. Mix well and allow it to cool.

For Paratha
Take the dough and knead well once again. Divide in to equal portions of I ping pong ball/ lemon size each. Now flatten the ball and dust with flour on all sides and press with hands on the edges so that it will stretch on edges and stay thin and middle portion remain thick. Now take same size if stuffing as the dough make it in to round shape and place on the centre of the dough and bring all edges of the dough to the top of the stuffing and close it. Now press the Paratha with hand gently to make it like roti and finally roll with chapati roller or pizza roller to make it flat and thin. now heat the flat bottom pan with 1 tbsp of oil spread all over and toast the Paratha on both sides by applying oil. Remove it when it starts browning. Now the Paratha is ready to serve. curd or raitha or any curry will serve as a best dip. But I like to have Paratha without any dip. Hope you like my recipe. Beans thoran(dry curry with coconut)

Beans are one of my husbands favorite vegetable. Even I love beans infact I love all vegetables. Beans besides being tasty they are good for health. They provide enough fibre to our body. Remember always go for greens they give you good amount of iron, fibre and several other vitamins especially vitamin A. You can cook beans in several different ways. I saw many of the American families have Beans steam cooked and seasoned with some salt or pepper or just they allow it to sizzle on a frying pan after boiling and season some sesame seeds. Now stories apart coming to our recipe,
This recipe recommends boiling of beans if you are conscious about the nutrition you can directly fry them, it takes long though. But the boiled version tastes good. The taste of this thoran also depends on how thin you slice beans. Coming to recipe

Ingredients
Beans finely chopped 1 cup(250grms)
Onion finely chopped 1/4 cup
Green chili paste 1/4 tbsp
Fresh coconut grated 1/4 cup
Ginger garlic paste 1/2 tbsp
Salt to taste
Red chili powder 1/4 tbsp
Curry leafs few( optional)
Cumin seeds 1/2 tbsp
Mustard seeds 1/2 tbsp
Urad dal 1 tbsp
Chana dal 1 tbsp
Oil 2 tbsp
Sesame seed powder 1 tbsp
Method
Add little water to beans that are places in microwave safe bowl and microwave for 5 min or you can pressure cook by adding 300ml of water to 250grms of beans for 3 whistles. After the beans are done flilter the water out. Now heat oil In a pan and add cumin seeds, mustard seeds, urad dal and Chana dal. Allow them to splatter. Then add curry leaf and onions and sauté until onions are transparent. Then add turmeric, ginger garlic paste, green chili paste and sauté till the raw flavor leaves out. Then add beans and mix well. Cook for 5 min under medium flame by adding salt. Then add red chili powder, grated coconut and sesame powder and mix well. Cook for 2 min under simmer and check for taste adjust salt or red chili power as per taste and turn of the stove. Now the super tasting beans thoran is ready to serve. How to make fresh garlic bread at home?

My first like in this town is garlic bread rather i would Like to say that I got addicted to this bread. You can prepare your own version of it. In general butter is used for the preparation. I would like to use mayo since it tastes much better. You can have it any time like for breakfast, snack or dinner. I love it love it love it!!!!!!!
Ingredients
Italian bread 4 slices
Mayo 1 tbsp
Garlic finely minced 1 clove
Oregano 1/2 pinch( or dry mint leaves crushed)
Italian seasoning pinch

Method
Take a small bowl and mix mayo, garlic, oregano and Italian seasoning together. Scoop 1/4 spoon of mixture and apply on one bread slice. Repeat the process for rest of the slices. Microwave for 15sec and enjoy. Hope you like my recipe.

Soya chunks with spinach

Soya are the healthy fibre rich protein food for the vegetarians. I live having them in all gongura which is tangy leafy vegetable. It tastes amazing when combined with other vegetables such as Indian cucumber( dosakaya), potato, beans etc., I have made this in all kinds and I will post all these recipes very soon. Now coming to healthy spinach and soya chunks curry. You can have this with roti or pulka or rice. Coming to recipe

Ingredients
Spinach 3 cups
Soaked washed and drained out sous chunks( soak for atleast 30 min)
Water as required
Cumin seeds 1/2tbsp
Mustard seeds 1/2tbsp
Coconut powder 1/2 tbsp
Oil 2 tbsp
Red chili powder 1/ 2 tbsp
Coriander powder 1 tbsp
Garamond masala pinch
Tomato finely chopped 1 cup
Turmeric pinch
Coriander or cilantro chopped 2 tbsp
Green chili 1

Method
Heat oil in a pan and add cumin, mustard seeds and allow then to splatter. Now add onions, green chili, Turmeric and ginger garlic paste and mix well. Cook under medium flame until onions are tender. Now add soya chunks and cook them till the raw flavor escapes. Now add tomato and cook till it becomes Mushy. Add spinach close the pan with lid and cook for 15 min under medium to low flame till all the ingredients are completely cooked then add red chili powder, salt, coriander powder, coconut powder and Garamond masala and mix well. Add 160 ml if water and close the pan with lid and add cook for atleast 5 min under low flame. Now the curry is ready to serve. Garnish with cilantro and serve with love. Hope you like my recipe.

Quick breakfast with Italian bread-mini bread pizza

I love all kinds of bread. Italian breads are generally more elastic and soft. I feel they are very much suitable to make mini bread pizzas. I usually use mozzarella cheese but today I am going to make it with mayo. If you like to make it with cheese go ahead and put it. It will taste good too!!

Ingredients
Thick slice of Italian bread
Tomato finely chopped 2 tbsp
Onions finely chopped 2 tbsp
Pepper to taste
Salt to Taste
Italian seasoning
Oregano a pinch
Maya 1 tbsp

Method
Take all the ingredients mix them well and spread it on the Italian bread. If you want a crispy Crest toast the bread and spread the mixture on the top. Microwave for 20sec. and the yummy breakfast is ready. It looks colorful and tastes wonderful.

Ragada potato chaat (cutlet)

In most of the places in Andhrapradesh ragada Is served on the name of cutlet. I used to have this very often when I was in India, after my marriage this was the first item that we had outside. Here in USA it is had to find chaat recipes in menu. Only few states such as Texas, california etc have this kind of recipes In the menu. So I tried this in my kitchen. It came out really good. Now coming to recipe

Ingredients
For potato cutlet
Potato 2 boiler and mashed
Turmeric 1/4 tbsp
Coriander/ cilantro chopped 1/4 cup
Salt to taste
Rice flour 1 tbsp

For ragada
White peas(batani) 1/2 cup soaked for 6hrs and cooked in a pressure cooker with little salt
Salt to taste
Chat masala.1 tbsp
Red chili powder 1/2 tbsp
Salt to taste
Dhania powder 1/2 tbsp
Cilantro / coriander chopped 2 tbsp
Onions finely chopped 1-2 cup
Water as needed
Butter/ oil as needed
Green chutney
Tamarind sauce
Save
Curd

Method
For potato cutlet
Mix all the above mentioned ingredients and make them like a small size balls and flatten them. Now heat pan with little oil and fry them on both sides under medium flame till they turn golden brown.

For ragada
Heat some oil/ butter in a pan and add onions & ginger and when the onions turn transparent add tomatoes and cook till raw flavor goes away. Now add turmeric, red chili powder salt to taste and mix well. Now add cooked batana and mix well. Cook under medium flame for 4 min and Check for taste. Now ragada is ready.

Take 2 potato cutlets and add ragada on top of it. Sprinkle onions, save , green chutney, curd or tamarind sauce or chili sauce what ever flavor you like to. I like to add crushed panu poori and enjoy it.

Tea Time Lemon Bread/Cake

Bread and cake both are my favorite. This is the combination of both. It tastes like cake and looks like bread. I feel this is the best combination for tea. It can also be served as a evening snack for kids. They will enjoy it for sure. The tangy lemon flavor and orange juice gives it a fresh and yummy taste.


Ingredients:
All purpose flour-2cups(when measured with 200ml container)
Sugar-1/4cup
Butter-1/4stick(30grms)
Milk- as required
salt pinch
Egg-1
Baking powder-1/2tbsp
Lemon zest-1tbsp
Orange juice-1/4cup
Golden raisins (optional)

Method:
Take two bowl's. In one bowl break open egg and add sugar, melted butter, milk, lemon zest, orange juice and mix well. Now in another bowl take all purpose flour(Maida) , salt and baking powder and mix well. Now add this mixture to the egg mixture while stirring slowly. Mix well. Finally add golden raisins and just give a gentle stir. Pre heat the oven at 350F. Take a baking loaf pan ( 8 1/2 x 4 1/2 x 2 1/2) spray it with baking spray or coat it with oil and dust with flour.  Transfer the bread mixture in to baking pan and bake for 30-40min at 350F. Insert tooth pick and when it comes out clean then it is done. Take the baking tray out of oven and let it cool for 5min then  slice it and enjoy.
