Muskmelon Smoothie- { karbuja (tharbuj) Juice}



Muskmelon is abundant in vitamin C and fiber, low in calories and virtually fat and cholesterol free, muskmelons easily fit into a healthy diet. It contains high levels of vitamin A, folate and potassium. The natural sweetness of many muskmelons makes the fruit a satisfying replacement for sugary, high-calorie desserts. I love to have this every time i make salads it gives a unique flavor.
Smoothie is the great way of having a complete fruit. I like muskmelon juice too!!!!
Ingredients:
Muskmelon (karbuja)-pealed,washed and cubed-2cups
Milk-1/4cup
Vanilla essence-1ts?(optional)
Sugar to taste
Ice cubes-4cubes


Method:
Combine all the ingredients along with ice and grind them throughly in a juicer and pour them directly in to glass with out filtering. you will get one to one and half glass juice.

Vegetable Pastry Pin Wheels in INDIAN Style



Yummy !!! I love these yummy pin wheels, I wanna make it little healthy way so I avoided cheese..They came out really good with crispy and little with Indian taste. We finished it in no time!!!!

Here are the ingredients for the yummy recipe
Puff pastry Sheet-1
Tomato puree-1cup
Boiled and mashed potato-1cup
Cilantro chopped-1/2cup
Onions chopped-1/2cup
Green chili/pepper corns finely chopped-2ts
Finely grated Ginger-1/2ts
Finely grated Garlic-1/2ts
Chat Masala/ Pudina Chutney Powder (available in Desi stores)-2ts
Pepper powder
salt to taste
METHOD:
  • Take the puff pastry sheets (Available in Frozen Section in all Grocery stores) out of the box and let it come down to room temperature.
  • Mean while Chop all the vegetables.
  • Add Pepper powder, very little salt to boiled potato and mash it. Keep it aside.
  • Now Unroll the Pastry sheet, and sprinkle Chat masala/ Pudina(mint) Chutney powder with little salt.

  • Apply tomato puree all over.


  • Sprinkle Green chili + onions + potato mixture + Cilantro one by one.
  • You can add Cheese/panner/ Grated Tofu if you wish.


  • Now roll the sheet carefully.
  • Cut it in to equal parts of 1 inch thickness, you will get 9 rolls out of one sheet.


  • Take a baking tray and cover with aluminium foil and grease with oil. Pre-heat the oven at 400F.
  • Arrange all the pin wheels in a baking tray and bake for 20-25min, until they turn golden brown.

Enjoy this yummy snack with tomato sauce / Green chutney. Kids will love them Just insert a tooth pick in the middle of each pin wheel and give them, they will enjoy. Hope you love my recipe. Samosa- yummy snack

Samosas are my favorite snack during tea time. I even like to enjoy them when raining. They are crispy and yummy. Although there are many kinds of stuffing's made in INDIA, I always like alu samosa. 
Ingredients:
Boiled, pealed and diced to small cubes-2cups
Carrots boiled and diced-1/2cup
Green peas-1/4cup
onions diced-1/2cup
Cumin seeds few
Ajwain-1/2 tea spoon (very little)
Turmeric-1/4ts
green chilies very finely chopped-3ts
salt to taste
chat masala/ pudina chutney powder-1ts
cilantro-10springs chopped


Method:

  • First prepare the dough for the outer crest of the samosa.
  • for crest preparation take the all purpose flour/ maida in a mixing bowl along with ajwain, salt and 2ts of vegetable oil.
  • Mix all the ingredients together, It is better to use hands instead of spoon or spatula, the oil should coat the  flour very well, then add water and knead like pizza/ chapati/roti dough.
  • Rest the dough for 15-20min, mean while prepare the stuffing.
  • For stuffing, heat 2ts of vegetable oil in a pan and add cumin seeds and allow them to splutter.
  • There after add onions and green chilies and saute until onions become transparent.
  • Now add turmeric and green peas and garlic and cook this mixture in a open vessel under medium flame until the green peas are well cooked, then add salt and chat masala/ pudina chutney powder and cook for few min.
  • Now add potato and carrot and mix well, cook this mixture for about 10min under medium flame.
  • Finally add cilantro and turn-off the stove.
  • Now take the dough and divide in to equal parts and roll each part like disc .
  • Cut each of the disc shaped dough into half, roll each half into a cone shape and fill with potato curry and wet the edges of the cone with little water and close it.
  • repeat this steps for all samosa's.
  • Heat oil for deep for in a pan and fry these samosa's in medium flame.

Enjoy with tea or pudina chutney.

yoghurt chutney/ perugu pacchadi/raita

Perugu pacchadi/ curd chutney/ raita is my favorite combo for bagara/biryani, I can even have it with white rice/paratha or simply eat it directly. It tastes that good. It is very simple to make and delicious to taste.

Here are the ingredients for simple raita:
Yogurt/curd-2cups
Green chilis chopped-2ts
onions chopped-1/2cup
Carrot chopped-1/4cup(optional)
Cumin seeds-few
Hing/ asafortida-pinch
Mustard seeds-few
red chili-1
curry leaf-1 rib (optional)
Cilantro/coriander for garnishing
Salt to taste
oil-2ts
Method:

  • Mix yogurt +half of green chili+salt+ half of onions and carrots in a bowl.
  • Prepare tempering: Take 2ts of oil in a pan and heat it.
  • Add cumin + mustard + hing+ remaining onions and green chili's and wait until the onions turn transparent.
  • Now add this tempering to the yogurt mixture and mix well.
  • Finally garnish with cilantro.

Note: you can add little water if you want thin consistency.

Whole Wheat Indian Bread- Chapati/ roti

Wheat Grain is one of the healthy grain.
Whole wheat flour is more nutritious than refined white flour, although in a process called food fortification, some micronutrients are added back to the white flour (required by law in some jurisdictions). Fortified white wheat flour does not, however, contain the macronutrients of the wheat's bran and germ (especially fiber and protein). Whole wheat is a good source of calciumironfiber, and other minerals like selenium
Nutrition Facts Of Whole Wheat Flour:

 The roti or chapati made out of regular, bleached and enriched atta is not so healthy. Whole wheat flour contains good amount of fiber that is very good for diabetic patients.


Note: The main Drawback of this atta is it's life period, It cannot stay for many days like refined one. So, always change atta atleast once a month.


Ingredients for whole wheat flour chapati/roti:
Whole wheat flour:2cups
Maida/all purpose flour-2ts
Curd/yogurt-2ts
Salt to taste
Water for mixing dough
vegetable oil-1/4cup


Method:

  • Take whole wheat flour + all purpose flour +salt and mix them thoroughly.
  • Now add 2ts of oil and yogurt (addition of these yields soft roti) and mix well. 
  • Add the adequate amount of water to knead the dough. The dough should be soft. just like chapati/roti dough.
  • Keep this aside for 15min by covering it with damp cloth.
  • Now make the dough it to small equal size balls.
  • Roll each ball just like roti and roast it on a pan by applying vegetable oil on both sides.
  • The healthy roti's are ready to serve.

Simple and Tasty Cauliflower fry


Cauliflower is my fav vegge!!!
I don't know what's the wonder in this vegge how ever you cook it turns tasty!!!
It's not only tasty, healthy too.
Today, I made this cauliflower recipe little  different from regular.

Ingredients:
Cauliflower-1
Onion chopped-1cup
Green chili / peppercorns-2
Garlic 3cloves
Salt to taste
cumin seeds-few
mustard seeds-few
Cilantro for garnishing
chili powder-1/2ts
Turmeric-1/8ts
Dry coconut powder to taste
Cumin powder very little(1/6ts)
coriander powder very little(1/6ts)
garam masala -1/8ts

 Method:
  • Separate the cauliflower florets( medium size) and wash them with little salt in hot water.
  • Boil them in a hot water/ microwave them(3-4min) until they are cooked but the texture remain intact.
  • Drain the water and Keep them aside.
  • Now prepare onion tempering. Heat the skillet and add 2ts of vegetable oil and heat it.
  • Add cumin seeds+ mustard seeds + red chili and wait until they splutter.
  • Now add onions and fry until they turn transparent.
  • Now crush green chili +garlic cloves+ cumin powder + coriander powder and add this paste to the onion tempering.
  • Add turmeric and fry until the raw flavor of garlic goes away.
  • Add cauliflower and mix all the ingredients well.
  • Finally add coconut powder and cook in open vessel under medium flame for few min.
  • Garnish with cilantro and enjoy with rice/roti.

How to make dal (pappu charu) without tamarind?

This is quick and easy version of dal. My mother used to prepare this during late mornings. Lemon is the quick substitute for tamarind. However it tastes different from regular pappu charu, it got it's unique flavor in it.

Ingredients
Yellow lentils/ toor dal / kandi pappu- 1cup
Turmeric-1/4ts
onions chopped-1/2cup
Lemon juice-squeezed fresh from a large lemon
Cumin seeds- few
mustard seeds- few
red chili-1
Ghee/ vegetable oil-2ts
Salt to taste
Chili powder-1tsp
 Method:

  • Take toor dal in a pressure cooker and wash them, add 2 cups of water and turmeric and cook for 3 whistles.
  • wait until all gas escapes from cooker and mash the toor dal finely.
  • Add lemon juice, salt, chili powder and mix well. Add little water and cook in simmer for few minutes.
  • Mean while prepare tempering  in a pan heat oil/ ghee and add cumin seeds+ mustard seeds + red chili and wait until they splutter.
  • Now add this tempering to dal and mix well.
  • The Pappu charu is ready to serve.

Soya chunks and Baby potato in Chickpea kurma/Koorma(Curry)


I love soybean recipes, soy chunks are great way of having them. Soy is considered as vegetarian meat because of two reasons. Firstly, protein content and the other is apperance of the chuncks is similar to meat,and tastes like a meat as well. 
Ingredients:
  • Soya chunks Soaked and Cooked - 2 cups
  • Baby potatos boiled and sliced-1cup
  • Onion (finely chopped)-1cup
  • Tomato (finely chopped)-1 cup
  • Oil - 3 tbs
  • Salt to taste
  • Cilantro chopped - 10 springs
Curry ingredients to be grinded together:
  • fresh Coconut - 1/2 cup
  • Chick peas- soaked and cooked-1/2 cup
  • Chilli powder - 4 ts
  • Coriander powder- 1ts
  • Cumin powder-1/2ts
  • Peppercorns - 1/2 ts
  • Cinnamon - 1 stick
  • Cardamom - 2
  • Cloves - 1
  • Ginger - 1 small peice
  • Garlic - 4 cloves
Recipe:
  1. Drain excess water from soya.
  2. Heat oil in a pan, and add Onion and Tomato one by one and fry them well.
  3. Add Soya and fry it for few minutes, then add potato and fry for few more minutes.
  4. Then add ground paste and fry till the raw smell goes away.
  5. Add 1cup of water and salt, allow this to boil for few minutes under medium flame.
  6. Then garnish with Cilantro leaves and remove from heat.
Goes well with: white rice and roti.

Sweet Potato Snacks


Ingredients:
Sweet potato-1
Salt to taste
Pepper powder to taste
Season Salt to taste
Parsley dry powder
Vegetable oil-2ts
 


Method:

  • Peel and wash sweet potato and cut them into long pieces just like french fries.
  • Cover baking tray with aluminium foil and grease it with vegetable oil.
  • Pre-heat the oven at 350F
  • Now take the Sweet potato pieces in a bowl and add little salt + Pepper powder and Vegetable oil and toss them so that the mixture coats them evenly.
  • Now transfer the potato slices to the baking tray and bake for 20-25min.
  • Remove them from the oven when the pieces turn medium Brown.
  • Take the pieces in a serving plate and add season salt and Parsley
  • Enjoy this tea time snack. kid's will love it.

Easy Breakfast Idea- Sweet Corn + Coconut Cream

Today morning I was feeling very lazy, may be due to the weather. It was raining all night. I got up really late, wanna try easy breakfast for my hubby. Just was searching a refrigerator for any instant food. Then I found Corn and Coconut cream, immediately I got an idea and implemented it. the recipe is very simple and easy.

All you need is
Sweet Corn Frozen-1cup
Coconut Cream-1ts

Method:
Take the corn in a bowl and microwave for 2-3min and when hot add coconut cream and enjoy. The coconut cream will melt in and give a marvelous flavor to corn. It's not just simple but easy, healthy and tasty too.  From now I'm gonna make it regularly.

Super Healthy Breakfast- Whole Wheat Bread Sandwich



Ingredients: (Makes 2 sandwich's)
Whole wheat bread-4 slices
Cucumber (kheera doskaya)-16 thin slices
Tomato- 8 thin round slices
Spring onions chopped-1/2cup
Carrot chopped-1/2cup
Pepper/ Green chili finely chopped-2ts
Onions-thinly sliced into longitudinal pieces
Eggs-2
Pepper powder to taste
Salt to taste
Lemon Juice
Seasoning salt to taste

Method:
  • Break open eggs and add pepper powder and salt to taste and whisk it thoroughly.
  • Heat skillet.
  • Dip one bread piece in a egg mixture on both sides and immediately throw it on a pan.
  • add oil on the Sides of the bread, flip when it turns golden brown.
  • Now when the other side is also completely cooked Take away from pan and keep it on a plate.
  • Repeat the same process for other 3 slices of bread.
  • When all the bread slices are ready, Take all the above mentioned vegetables and sandwich between two bread slices.
  • Add seasoning salt, pepper powder to taste and sprinkle some lemon juice.
  • Microwave these slices for 2-3min and enjoy.

Masala Utappam with left over Idli batter & Award time :)

Utappam!!!!!
 I love having it for my breakfast /luch/dinner. This is made by different people in different ways. I though when can make masala dosa, why can't we make masala utappam? and now my experiment yielded fruitful results and my masala utappam is ready.

Ingredients:
Left over IDLI batter ( Click Here for IDLI recipe)
Potatos boiled and pealed and sliced-2cups
Onions chopped-1cup green peas-1cup
green chilis /pepper- chopped-2ts
Salt to taste
Cumin seeds few
Mustard seeds few
turmeric -1/8ts
utappam

Method:
For masala Curry:

  • Take a skillet and heat 2ts of oil in it and add cumin + mustard seeds and wait until they crackle.
  • Now add onions, green peas and green chili and saute until the onions turn transparent.
  • Add turmeric and saute for 1min under medium flame.
  • Add potato and mix well, finnay add cilantro (it's optional).

Masala Utappam:

  • Take the left over Idli batter and add water if required, the consistency of the batter should be very soft.
  • Check for salt.
  • Now heat pan and scoop out one big spoon full of batter and pour it on a pan and spread the barre thin, just like you spread dosa.
  • Add oil on the sides of utappam.
  • Now scoop out some potato curry and add on the top of the utappam.
  • cook under medium fame till the bottom of the utappam attains golden brown and turn it on the another side. Cook this side for about 1min.
  • Now the utappam is ready to serve with sambar and coconut chutney.
